Mahi mahi (also called dorado or dolphinfish — not related to dolphins) has a firm, meaty texture with a large flake and a mild, slightly sweet flavor that is less neutral than halibut but less assertive than mackerel. The skin, if left on and properly scored and seared, crisps beautifully. Mahi mahi's robustness makes it well-suited to the high-heat methods (grilling, blackening) that would damage more delicate white fish. Hawaiian preparations include mahi mahi with teriyaki, macadamia nut crust, and pineapple-ginger sauce. In Caribbean cooking, mahi mahi is grilled or pan-seared with jerk seasoning or a mango salsa. The fish's mild flavor is an excellent canvas for assertive accompaniments (chimichurri, harissa, preserved lemon and olive tapenade). Fresh mahi mahi should have firm, pale pink-tan flesh; older fish turns significantly darker and loses the mild sweetness. Most frozen mahi mahi is processed aboard boat immediately after catch and is acceptable quality.
